A satoshi is the smallest unit of Bitcoin. One BTC equals 100,000,000 satoshi, and every amount ever recorded on the Bitcoin blockchain is a whole number of them. Put the other way around, one satoshi is 0.00000001 BTC.
In practice, satoshis are the unit the Bitcoin network itself counts in: wallet balances, payment amounts, and transaction fees all reduce to an integer number of satoshi under the hood. People also quote small amounts in sats because a long string of decimal places after a fraction of a BTC is hard to read at a glance. The Lightning Network keeps finer off-chain accounts in millisatoshi, but anything settled on the blockchain is always a whole number of satoshi.
The unit is named in honor of Satoshi Nakamoto, the pseudonymous creator who released Bitcoin in 2009. In everyday use the name is shortened to 'sats', and 'stacking sats' is common slang for accumulating bitcoin a little at a time.
